Was on a call with some of the team including @bdawson24 this morning.

Ben's our resident grillmaster at Bronco Basecamps, and I've heard some of you get into quite the discussion with him on the best way to cook meats. It sparked some curiosity: How are we cooking tomorrow? And for our Canadian friends, what did you do last month?

Had deep fried turkey last year for the first time last year. Wasn't impressed either.
I’ve heard this before. Also it can cause fires. What were your thoughts?

I am trying my first spatchcock turkey on the pellet grill. Did dry brine, added cherry salt to the kosher salt, and using cherry pellets...and my wife is cooking her 8th generation German chicken and dumplings with my mother's cornbread stuffing, mashed potatoes, other assorted side dishes, and pumpkin pie.
My son, his wife, and my first grand daughter will be here, my other son and his fiance are meeting her family and will be home this weekend.
Went to Chickasaw Oklahoma and got my picture with the 50ft leg lamp.

I’ve heard this before. Also it can cause fires. What were your thoughts?
Lots of things can cause fires. It is not for everyone to attempt. I have been frying them for years, sometimes up to 24 in a day. My wife does not like them cooked any other way.
We have plenty of stuff to run through the oven. I like to hang out by the fryer and have a couple of cold ones......

I'm also going to spatchcock Tom and smoke him with apple wood. I ended up quarter Tom and deboning the breasts. Tom never tasted soooo good!

Laura, thank you for bringing up this important topic.

I plan to smoke my 22 lb turkey at 275 for around 11 hours or so. I am using cherry wood as my wood of choice and using the Big Green Egg as the method of smoking. I have been doing this for many years and it has always turned out fantastic and a major hit at Thanksgiving (and other special events).

It’s especially great for those who have not tasted real smoked meats. So far, those people have always been amazed.

Keep in mind, it’s not me, it’s the equipment that is being used and the directions that are followed. (Yes, as a guy I do follow the instructions. LOL)

Not cooking. It's just the three of us so we go out to dinner. No sense of cooking a big meal for two adults and a toddler.

Deep fry 15lb bird #1
-drop the sucker in the juice..slowly lol

Convection bake 20lb bird #2
-separate skin from meat
-sage leaves under skin
-pat it dry
-then work the surface warm stick butter
-coat it with 1 layer of mayo
-season with garlic/salt/pepper/paprika/onion powder
-bake @ 350 temp for 4-5hrs

DONT FORGET THE SIDES using 50yr old recipes:
-s.w. cheesy potatoes
-green bean cass
-sweet potatoe souffle with marshmello
-deviled eggs
-stuffing
-apple salad (waldorf salad)
-crouisant
-homeade mac n cheese
-5hr prep & cook over here just on sides...wife hates me haha. She loves it. The family too.

I saw your post while looking for something myself. When it comes to cooking turkeys, I'm all about that juicy, flavorful goodness.
