Oh man you will have a blast! Have you done OffRoadeo yet? That is a great spot to do it and close to all the awesome trails. Melissa Clark and her husband Brian, along with Blake Torgeson @TorgSurv all work at the Moab OffRoadeo and are a great resource for everyone here.

I'm not sure about off-road trails within Zion, Bryce, or Capitol Reef, but there are tons of places nearby. In Arches there's a great 4x4 trail that runs from Tower Arch to Balanced Rock, and another out and back trail from the Delicate Arch viewpoint to Dry Mesa. In Canyonlands one of the most popular trails is the White Rim Trail (permit required), and there are lots of other options in the Needles district and the Maze district (some of which require permits as well).
