I am currently looking for recommendations for a camera to mount when i go off road or in scenic areas. I'd love to hear some recommendations.

Looking for a good mount for a Gopro or DJI camera to mount on the trail sights for our Moab trip.

I liked their products so much, I have started using tier tablet mounts in my fleet. I will be adding an arm to it for my hand held radio
Also when we were in Moab, I used the GoPro brand suction mount on my rear side window. I use the suction cups attachment on my car at the track all the time (road course). They stay on at over 100 mph and with G's. All you need is a clean flat surface, glass or painted makes no difference. Its give you lots of options.
GoPro has quality stuff for mounting options.
We just did a cruse in a rental car from Carmel to Big Sur and using the suction cup mount got some amazing photos.
I use it in conjunction with the GoPro remote controller so I can turn one or two cameras on and off remotely.
If you only use the center of dash mount in Moab, you will get you lots of shots of your hood and sky.

Using information I got from @JoergH who was with in Moab, I added the TACKFORM dash mount, their GoPro mount for center of dash. Used it also for phone mount in conjunction with a RAM Mount phone grabber.

Yup, you called it about the dash mount and the pictures of your hood and sky! I'm also looking at a trail sight mount as welt get that GoPro further toward the front. But that suction cup mount sounds really good too ....
The suction cup thing is so versatile. You'll find the best location by trial and error.
Put it on the leading edge of the hood.
You can add extensions, change angles and more.
If you watch Jay Leno garage it's what they use during the road test.

I started with my old GoPro 4 and mounted it to the outside of the windshield with a suction cup mount, for a good driver POV. The footage was good and pretty stable. I tried some alternate views, like suction-cup mounted to the front fenders to show wheel footage and such. It was at that time that I got a GoPro 9 (because my research showed it's not much different than the latest models, but I could get it much cheaper). The GoPro 4 on the fenders was quite jittery. Too much movement there. But the GoPro 9 footage was eerily rock solid. The stabilization in a 9 or later is amazing. You watch the video and what you see is the hood of the Bronco tilting and moving, but the image is fixed.
Unless you are really into trying to capture a 360 view, I'd highly recommend a GoPro 9 or later.
I've also mounted the 9 on the dash rail, but sometimes I can get reflections off the windshield. I think the outside of the windshield is the best main POV location. The nice thing is you can remote control the GoPro with your phone, so starting and stopping footage doesn't mean climbing out of the Bronco and stretching across the windshield.

I have bought specialty mounts. like my scuba mask, RAM or Tackform.
Check out the RAM mounts at our Bronco nation store, they show them attached to different parts of a bronco. Should also give you some great ideas.
And as @timhood said, the newer cameras have very little jiggle.

I also had one mounted on the rear passenger quarter panel looking forward, but that view wasn't as interesting as I thought it might be.

Yeah, I have the GoPro 11 and the steady cam feature is REALLY nice! The one issue I have with the GoPro is the it tends to overheat and shut down when you try to run it for too long. Someone told me that if you control it from your phone it shuts down the displays on the GoPro and that helps with the overheating a bit. I haven't had a chance to try that yet so I don't know who much it helps.
I had an overheating issue when it was inside under the front windshield in the sun. Fortunately, that was after several hours of on-off use. I let it cool by sheltering it from the sun for a bit and it was OK for the rest of the off-roading. I haven't had any problems when I mounted it outside--maybe the wind provided cooling or the lack of heat magnification from the windshield helped. But I haven't been in too extreme of temperatures. Probably 90 or low 90s max.

Does anyone have any experience with Insta360 cameras? Was chatting with my son who is an avid scuba diver and we were on YouTube comparing insta360 x4 with the gopro… fairly close price-wise, but the thought of being able to see in cab reactions while on the trail might be kind of fun…

I can attest to those hood and sky shots! Although we dod get some good footage from Onion Creek using the the dash mount.
I've since also picked up the section cup mount, as well as a mount for the trail sight but I have yet to try them out.
