Title pretty much sums it up- Got into a 26 Heritage last week, looking to start detailing it on a somewhat regular basis. The problem is, I have never detailed vehicles before. I have no idea where to even start. Especially with the interior. Any advice appreciated ✌

Plenty of detailing kits on Amazon and at your local parts and supply store.
Some detailers will come to your home and do the job in your driveway. Stay with him while he works, watch what he does, check out his equipment and cleaning products, ask questions. Check online videos, too.

You don't need a lot to keep your truck reasonably clean. A good wash mit, a couple of cheap bath towels from Walmart, some microfiber towels, a bucket. I use a small amount of blue Dawn Walmart substitute in a bucket (a small but good squirt) to clean the interior after vacuuming, use a brush on the end of the vacuum for the seats and dash. Wipe everything down with your bucket of mildly soapy water. Everything on the outside, including the engine (cold) and undercarriage gets the hose. Wash with a decent ceramic car soap, I've been using Jay Leno's soap. Once in a while use some Turtle wax spray ceramic on the pretty much the whole outside.
