Texas Bronco Off-Roadeo: What Am I Missing On Sundays???

I'm finally looking to book my trip to the Texas Off-Roadeo a year after taking delivery of my Bronco. Looking at available dates and times, I notice that most Saturdays are 8:30a-6:30p (10 hours) and Sundays are 1:00p-8:00p (7 hours). Sundays work best with my schedule and I haven't seen the question asked before. What am I missing with the 7 hours on a Sunday vs. the 10 hours on a Saturday? What do they cut out of the day?
