You can turn off the touch screen, and dim/off the ambient lighting, if you have that, but not sure about the dash. I think you can, but can’t swear to it

In my 23 I can turn off my touchscreen but not the dash display…

Settings-) Display options-) display off…
Cumbersome? Absolutely

To enter Stealth Mode - you need the following button sequence:
up, up, down, down, right, left, right, left, 2 taps on the brake pedal and then press that start button with the index finger on left hand and you will be all set!

I don't know about turning the dash off, but there is a way to turn it down. If I remember correctly, there is a button near the headlight switch for dash brightness. I will check when I get off work.
