Outer Banks comes with 18x7.5. The stock tires are 32" tall.
A 285mm width tire will fit a 7.5" wide wheel. One inch taller than stock will fit your vehicle.
So, you can do a 265/70/18 or a 285/65/18. Remember, relative to width, the second number (aspect ratio) is just as important as the first (width). To find tire height you take the aspect ratio of the width (70% of 265mm), which gives you the sidewall height. Multiply that by two, because there is a sidewall above and below the center of the wheel (axle) and add the wheel height. So, a 265/70/18E tire is: 265mm * .70 = 7.3. You multiply that by two (7.3 * 2 = 14.6) + 18 = 32.6. So, a 265/70/18 should be about 32.5" tall, but all manufacturers have slight differences. You know it is 265mm wide, which is 10.4". A 265/70/18 is a 32.5 x 10.5 x 18 tire.
Personally, the difference in height is negligible and the performance is tread dependent. The only reason(s) to change your tire is tread performance, or looks. I would buy a 265/70/18 BFG AT KO2. It's the best tire ever made on the planet (and most others) and it's worth every penny, no matter how much they cost. And yeah, they'll fit.
Any time you hear/read someone talking about 255, 265, 285, 305, etc. and talking about tire size (height), you'll know they don't really know what they are talking about unless they include the aspect ratio (second number). You can't tell the height if you only know the width.
